Avilia’s Recipe: “Salad pizza” with rocket, avocado, cherry tomatoes and walnuts



Salad Pizza

Today I would like to introduce to you my favourite pizza – of course vegan: I call it the “salad pizza” because the topping (rocket, avocado, cherry tomatoes and walnuts) is placed raw, after the dough has been baked:

Ingredients (for 2 persons):

  • For the dough:
    • 1 cube of fresh yeast
    • 2 tea spoons brown sugar
    • 500g flour
    • 2 tea spoons salt
  • For the tomato sauce:
    • 250ml sieved tomatoes
    • 1 table spoon dried oregano
    • 1 table spoon dried basil
    • Salt, pepper
  • For the cheese:
    • 4 table spoons yeast flakes
    • 2 table spoons margarine
    • 3 tea spoons flour
    • 1 tea spoon salt
    • 1 tea spoon mustard
  • For the topping:
    • 250g cherry tomatoes
    • 80g rocket
    • 1 avocado
    • 2 hands full of walnuts

  1. For the dough: Mix the yeast cube with 250ml warm water, sugar and 4 table spoons of flour and let the dough rise for 10 minutes
  2. Add salt and 2/3 of the remaining flour to the dough and then knead
  3. Bit by bit add the remaining flour. The dough shouldn’t fall apart but should also not be sticking to your fingers. If needed add more water or flour.
  4. Cover it and let it rise for 1 hour. In the meantime mix all the ingredients for the tomato sauce. Wash the rocket and the cherry tomatoes. Cut cherry tomatoes in halves.
  5. For the cheese: Melt the margarine in a pot, stir the flour in. Mix it with 150ml water and add yeast flakes, salt and mustard while mixing.
  6. Preheat the oven to 250°. Roll the dough out and let it rise under a dish towel for 10 more minutes.
  7. Then spread the tomato sauce and the vegan cheese on top. Bake it for 10 minutes. In the meantime, cut the avocado in half, remove the core and cut the fruit in small slices.
  8. When the pizza is finished baking, put avocado, rocket, tomatoes and walnuts on top. Flavour it with a little bit of salt.
